Simple kale salad

Kale massaged with lemon juice topped with avocado and olives. And a dressing of tahini, lemon juice, curry powder, cayenne, water, and nooch. 

This was definitely a good study break meal. Lately I’ve been studying all day and when I break to eat I always feel crappy after and don’t want to study any more. This definitely helped me keep goin and feel good. And was simple to make :)

Zucchini noodles with marinara, peas, olives, and avocados. 

For the noodles I just took two zucchini and used a peeler to make thin noodles. I have like 3 spiralizer devices and this works the best

The marinara is a handful of soaked and drained sundries tomatoes, a pint of cherry tomatoes, a handful of basil, cayenne, nooch, and the cores to the two zucchini. Blended together.

I started a summer class and I’ve been working like crazy lately so I’m really sorry for the lack of posting. I love and miss you all :) I will try harder, and the class is only until the end of the month :). 

I made this salad quick before going to class yesterday. Baby spinach, shredded cabbage, peas, avocado, tomatoes, olives, cilantro, curry tahini dressing. (Dressing is just tahini blended with water, lemon juice, and curry spices)

My favorite thing from Pure Food and Wine! The S&M salad. Mixed greens with a pumpkin seed and lemon dressing. Topped with avocado, hemp seeds, olives, dulse, and rosemary crackers. I think I get this every time I go and it does not get old it’s so good.

Steamed sweet potato, broccoli, and asparagus. Mmmmmmmmm. Getting a steamer was the best thing I ever did and I’m still saying this like a year later. Especially when you’re cooking just for yourself it is so easyyyy.
